Asia Meets Mexico

My wonderful husband took me out to Applebee's last week for a date. We tried their Chicken Wonton Tacos and thought that they were pretty good. I started thinking and figured that I could whip something like that up, but change it just a bit to make it my own. Now that my brother in law is visiting it gave me a chance to try it out. This is what I did.

Crock Pot on high.
1 jar of salsa
3 limes juiced
1 bunch of cilantro chopped up
3 pounds of chicken halved

Mix up.
Cover.
Cook for 4 hours till can be shredded with two forks.

Top it with a homemade slaw made with:
1 cup of shredded cabbage
3 large carrots shredded
1/4 cup of chopped kale
1/2 cup light cole slaw dressing
1/2 cup Toasted Sesame and Ginger Vinaigrette (or any asian inspired dressing)

Then top individual servings with sliced almonds. Can be served in crisped wontons, tortillas or just bowls. If you serve it in bowls try topping it with fried garlic wontons or something like that usually found in the salad topper area of the grocery store. And serve with a lime wedge.
