These are so super yummy if you can handle the heat. I eat them like they are candy. These things are just the best. I am actually making them in a few minutes so that I just have to pop them into the oven for lunch time.
What you will need:
12 jalapeños, with seeds and membranes removed
12 slices of bacon (thickness of which is up to you, but as long as it is real piggy bacon)
1/2 cup cream cheese
1/2 cup cheddar or monterrey jack or pepper jack cheese
1/2 cup cooked italian sausage ( I of course use hot)
*Read Directions before shopping. You may want to buy 24 slices of bacon after reading.
Directions
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Mix cream cheese and cheddar/monterrey jack/pepper jack cheese together in a bowl until evenly blended (food processor is awesome for this).
- Fill each jalapeno half with the cheese mixture.
- Put halves back together and wrap each stuffed pepper with a slice of bacon. (You can wrap the halves if you have more bacon to make them go further...24 instead of 12)
- Arrange bacon-wrapped peppers on the prepared baking sheet.
- Bake in the preheated oven until bacon is crispy, about 15 minutes.
